Healthy Vegan Chili

I’m not officially a Vegan, but I love cooking and eating healthy. The vegan lifestyle is inspiring to me. In an effort to delve into the Vegan world of cooking, I decided to create a Healthy Vegan Chili recipe. It turned out to be REALLY DELICIOUS and it’s TOTALLY HEALTHY too. Doesn’t get much better than that! Give it a try, it’s easy and I promise you won’t be disappointed. 

Healthy Vegan Chili Recipe

 

Ingredients: 

  •  10 oz. can Vegetarian Organic Chili Beans: Drained (I used Westbrae Natural)
  • 1 Can White Cannellini Beans: Drained (optional)
  • 1 can Rotel (drained)
  • 1 can Petite diced tomatoes with chilies 
  • 1/2 Sweet Onion (diced)
  • 1/2 Yellow Pepper (diced)
  • 2-3 Stalks Celery (diced)
  • 2 tsp. Chili Powder
  • 1 tsp. Crushed red pepper flakes
  • 1/2 tsp. Sea Salt
  • 1/4 tsp. Cardamom 
  • Avacado (optional topping)

Directions: 

  • Drain Cans of Beans and Tomatoes
  • Chop Veggies
  • Add All Ingredients to Crock Pot
  • Cook on Low for 4 hours (until veggies are tender)
  • Top with avacado and additional red pepper flakes (if desired)

Healthy Vegan Chili

 

It really is a delicious and simple recipe. If you’re not a vegan, feel free to add shredded cheese and a dollop of plain Greek yogurt. 🙂
