Healthy Banana Bread Oatmeal

Breakfast is the most important meal of the day. I don’t know about you, but if I start my day off with a healthy breakfast I just feel better. I’m also encouraged to eat healthier throughout the day if my breakfast is hearty and nutritious. I love eating oatmeal, but sometimes it gets BORING! I created this Healthy Banana Bread Oatmeal Recipe as a way to kick up the flavor of oatmeal while keeping it good for you. Give it a try! 

Healthy Banana Bread Oatmeal

Ingredients:

  • 1 1/2 Bananas (1 Mashed, 1/2 chopped)
  • 1/2 Cup Old Fashioned Oats
  • 3/4 Cup Almond Milk (or Coconut Milk)
  • 1 tsp. Pure Vanilla Extract
  • 1/8 tsp. Ground Cardamom
  • 1/2 tsp. Cinnamon 
  • 1 Tbsp. Chopped Walnuts (optional)

Directions: 

  • Mash 1 banana using potato masher (or fork)

  • Add Oats

  • Add Almond Milk

  • Add remaining Vanilla, Cardamom and Cinnamon and stir well
  • Microwave on high for 2 1/2-3 minutes
  • Stir and allow to sit for about 3 minutes to finish cooking
  • Add chopped walnuts and chopped banana
  • Enjoy!

    • It’s so true Maggie! You feel like you’re cheating when you eat this. Unfortunately, it doesn’t follow a Paleo diet. I’m not strong enough for that. I love my oats! 😉

  2. My wife is thinking she gets hives from eating things with almonds. Will almond milk have the same affect or do you think it’s safe to give it a try in the food? It’s not like she’ll die or anything.

    • I would substitute a different milk, I really enjoy coconut milk in this recipe as well. Don’t risk the almond milk if she has an allergy! 🙂
