Organic Green Tea Lemon Cookie Recipe

Green tea is loaded with powerful antioxidants and has great health benefits. I created this recipe using organic ingredients. This is a vegan recipe and I promise it’s delicious. Even my husband, who usually hates anything vegan absolutely loved these cookies. My kids also loved this Green Tea Lemon Cookie recipe. SUCCESS!

In Large Bowl
  1. Add Flour, salt, baking soda, baking powder, corn starch, cream of tartar and green tea powder
  2. Stir gently with a wooden spoon until blended

In Stand Mixer
  1. Cream together Coconut oil and caster sugar until well blended (about 2 minutes)
  2. Add Almond Milk, Lemon Zest and Vanilla
  3. Beat Until Smooth

Cream Ingredients

Combine Flour Mixture and Coconut Oil Blend in Large Mixing Bowl
  1. Slowly add flour mixture to coconut oil mixture using a wooden spoon to stir
  2. Once all the flour mixture is added, use your hands to fully incorporate
  3. Mix with clean hands until a soft dough forms
  4. Add additional almond milk one Tbsp at a time if necessary to create a smooth, soft dough
Prepare Dough
  1. Lightly flour a large cutting board
  2. Using floured hands, turn dough out onto cutting board
  3. Roll dough into a cylinder about 12″ long

Chill Dough
  1. Wrap dough cylinder in plastic wrap and freeze for 45 minutes or refrigerate for 2 hours or more before baking

Prepare Cookies
  1. Line Baking sheet with parchment paper (this is important!)
  2. Once dough is chilled, use a sharp knife to cut thin slices (about 3/8″)
  3. Place cookies about 1″ apart on parchment lined cookie sheet
  4. Sprinkle with Turbinado Sugar and remaining lemon zest (optional)
