I’ve been on a coconut kick lately. I’m addicted to drinking natural coconut water to replenish my body after exercise. I’ve also been enjoying coconut milk in recipes and straight from the glass. My youngest son, Alexander absolutely loves Piña Coladas. He’s all about anything with pineapple and coconut.
I was inspired by my recent coconut kick and my sons love of tropical fruit, so I decided to create a healthy and delicious Piña colada smoothie. The typical beach side bar Piña colada is loaded with sugar and fat. But not this one! This Piña colada Smoothie is loaded with healthy fruit, coconut water, coconut milk and protein rich Greek yogurt. It was a hit with my kids and my husband (all of them can be hard to please).
