Coconut Chicken Bites

I’ve been on a coconut kick lately. I drink coconut milk and coconut water pretty much every day. It really is a healthy addition to any lifestyle. So, I was wondering how I could incorporate coconut into a dinner meal. That’s when I came up with this recipe for Coconut Chicken Bites. 

Coconut Chicken Bites

Both myself and my youngest son Alex are allergic to shrimp, so I thought I would add a twist to coconut shrimp and make my own version of coconut chicken bites. This recipe is pretty simple and it was a hit with the entire family.  Here we go! 

Ingredients:

  • 1 lb. Chicken Breast (cut into bite sized pieces)
  • 2 Large Eggs 
  • 2 Cups Shredded Coconut (I used the sweetened variety) 
  • 1 Tbsp. Coconut Milk
  • 1 Tbsp. Coconut Oil
  • 1 tsp. Sea Salt
  • 1/4 tsp. Cardamom
  • 1/4 tsp. Cumin
  • Pepper (to taste) 

Directions:

  • Preheat oven to 400 degrees
  • Grease baking pan with Coconut Oil 
  • Cut chicken into bite sized pieces and season with salt, pepper, cumin and cardamom

Coconut Chicken Bites

  • Beat together Eggs and Coconut Milk

  • Dip Chicken into egg mixture

  • Roll Egg Coated Chicken in Shredded Coconut

  • Place chicken in greased baking pan

  • Bake for 20-25 minutes until chicken is cooked through and coconut is crispy
  • Enjoy!
